Hyper-protease producing mutants were isolated from Bacillus subtilis MAFF10-08100 a natto Miura strain. All seven mutants showed low growth while protease activity was high with soybean protein as the substrate compared to the parent strain. Protease production depended on growth and was maximum in the stationary phase. The extracellular protease activity of mutant No .32 showed a maximum that was 3.6-fold times that strain cells.
