The purpose of this paper is to examine the results of the project "Gastronomy and Cultural Heritage of Londrina", which tries to structure a discussion about the main cultural aspects that influenced the historical formation of society in the city of Londrina, focusing on the gastronomic references of its immigrants and descendants between 1930 and 1950. Furthermore, the project looks for the concept of Intangible Heritage, using theoretical studies, investigating gastronomic practices and traditional dishes, which can be used to identify a particular ethnic group or immigrants, showing its history, identity and sense of continuity of its traditions.
