Crystalline maltitol is a sweetener that under food legislation is designated as E 965 (i). Due to its structural properties, it is classified also as a bulk sweetener. Crystalline maltitol does not cause tooth decay, it has a low glycemic index and reduced energy value which make it suitable for manufacturing of dietetic foods. more » ... zation of main parameters (specific volume, concentration of reducing substances and total sugars, alkalinity, sorption properties, etc) of sponge cakes prepared with equivalent amountof sugar and cristalline maltitol, was faund that cristalline maltitol is a sweatable bulk sweetener in these products and its use does not adversely effect the quality of the product.
