more » ... function of molal concentration of saccharides. The VΦ and η data have been analysed in the light of equations, VΦ = VΦ + svm and (ηrel - 1)/M = A + B M respectively. The activation thermodynamic quantities (∆µ20#. ∆H20# and ∆S20# ) of viscous flow for mono- and disaccharides in water and in (DMSO + water) mixed solvent systems have been determined at 293.15, 303.15 and 313.15 K. The results in regard to solute-solvent and solute-solute Interactions in water and in (DMSO + water) mixed solvent systems have be, n discussed in terms of the values of VoΦ, Sv and those of A and B. The values of limiting apparent molar expansibilities (Φ0E)and that of (∂2V0Φ/∂T2)P have been determined from temperature dependence of V0Φ. The results of the study reveal that mono- and disaccharides behave as structure-makers in water and also in (DMSO + water) mixed solvent systems of varying composition.
