Characterization Of Soru-Chakli – A Traditional Food Of West Bengal

India has a great heritage of traditional foods. Every state has its own special food which is consumed in a particular season and occasion. Soru-chakli is one of such traditional food of West Bengal, consumed during rainy season and is made from the batter of raw rice flour and palmyra palm (Borassua flabellifer) pulp. It has an attractive yellow colour and pleasant flavor. The present study has the objectives of documenting the traditional knowledge pertaining to preparing soru-chakli.
