VCO emulsion beverage products were developed to overcome the oily taste of VCO, so that people can consume them directly. The aim of this study was to formulate high quality VCO emulsion drinks that can be accepted by consumers. The study consisted of two stages, namely preparation of basic emulsions using two types of emulsifier, i.e. arabic gum and tween 80 which were formulated with VCO and water. VCO emulsion beverage formula that meets the requirements and can be accepted by consumers is the one having the ratio of the basic emulsion (arabic gum) to water of 1:2. This product has characteristics that include a rather peculiar smell of VCO, slightly sweet sour taste typical of VCO, quite stable, pH 3.94, Total Plate Count (TPC) 1.4x10 2 , Free Fatty Acid (FFA) content of 0.22%, peroxide number 1.64 mg eq O 2 /kg, 51% lauric acid and the content of Medium Chain Triglyceride (MCT) 65.74%. keywords: Arabic gum, tween 80, VCO emulsion drinks abstrak Produk minuman emulsi VCO dikembangkan untuk mengatasi rasa berminyak VCO, agar masyarakat dapat langsung mengonsumsinya. Tujuan penelitian adalah membuat formulasi minuman emulsi VCO yang berkualitas dan bisa diterima oleh konsumen. Penelitian ini terdiri atas dua tahap yaitu pembuatan emulsi dasar dengan menggunakan dua jenis emulsifier antara lain gum arab dan tween 80 yang diformulasikan dengan VCO dan air. Minuman emulsi VCO dibuat dengan perbandingan emulsi dasar (ED) dan air (b/b) sebagai berikut EDGum:air (1:1; 1:2; 1:3), dan EDT80:air (1:1; 1:4; 1:6). Formula yang memenuhi syarat dan dapat diterima konsumen adalah minuman emulsi VCO dengan perlakuan emulsi dasar gum arab dan air 1:2. Produk ini mempunyai karakteristik meliputi bau agak khas VCO, rasa asam manis sedikit khas VCO, cukup stabil, pH 3,94, Angka Lempeng Total (ALT) 1,4x10 2 , kadar asam lemak bebas (FFA) 0,22%, bilangan peroksida 1,64 mg ek O 2 /kg, asam laurat 51%, dan kandungan Medium Chain Triglyceride (MCT) 65,74%. kata kunci: Gum arab, tween 80, minuman emulsi VCO
