Effect of Sugars on d-Arabitol Production and Glucose Metabolism in Saccharomyces rouxii

were analyzed for D-arabitol, glycerol, and glucose by procedures described by Neish (27). They were determined spectrophotometrically with a Baush and Lomb Spectronic 20 colorimeter. D-Arabitol and glycerol were separated by paper chromatography. The solvent system was 1-butanol-acetic acid-water (4:1:5 by volume). The polyalcohols were detected on one chromatogram by a modification of the silver nitrate method (4). A duplicate chromatogram was dried, and the areas containing the polyalcohols
