The article analyzes modern methods of quality control of rice grain and products of its processing developed by foreign scientists. However, the known methods for assessing the quality of rice grain and products of its processing, proposed by foreign scientists, have a major drawback, namely, duration of the method implementation, as a result of which there is no possibility of operative quality control of rice grain, which does not allow regulating and stabilizing treatment regimes for some stages of technological process.
