The purpose of this research was to determine the optimum time of the highest protein production by Lactobacillus sp. and to determine inhibitory activity of bacteriocin against pathogenic bacteria (Escherichia coli and Staphylococcus aureus). Using the Bradford method, the results showed that the optimum time of highest bacteriocin production was after 36 hours of incubation, with a protein content of 0.93 mg/ml. The bacteriocin inhibitory activity against Escherichia coli showed that a protein concentration of 30% gave a maximum inhibition index of 1.1 mm, while for Staphylococcus aureus, a concentration of 70% gave a maximum inhibition index of 0.3 mm. Further research is required to determine the stationary state of bacteriocin production in this circumstance.
