The paper presents the results focused on the study of pork quality tested in the production experiment performed in the farms of the North-Eastern Ukraine. ... ry examination. The pre-slaughter weight of experimental pigs was by 6,3 kg higher than of those from the control variant. The weight of freshly slaughtered carcasses was also higher in the experimental animals, by 4 kg (đ>0,5), while the percentage of output in the experimental animals was higher by only 0,8 %. As a result of determining the mass of muscle tissue it was established that the values of this index in the experimental group of pigs was by 6,5 kg or 16 % higher; fat – by 1,75 kg (29,4 %), bones – by 0,18 kg, or 1,9 % (đ>0,5). After 48 hours of storage, single cocci were found in the experimental samples of meat, while in the control variant – 3-5 through the microscope. Реферат: Представлены результаты по исследованию качества свиного мяса, полученного в результате поставленного производственного опыта в хозяйствах Северо-востока Украины. Для опыта были сформированы группы свиней по 20 голов в каждой. В контрольном помещении проводили дезинфекцию с использованием «Экоцид С» и «Виросан» (контроль), а во втором - «Би-дезтм» и препарат «Биоцидин» (опыт). Животных забивали по достижению 100 кг живой массы и отбирали пробы для органолептической, биохимической и санитарной экспертизы. Предубойная масса опытных свиней была на 6,3 кг больше, чем у контрольных. Масса парной туши была больше у опытных животных на 4 кг (р>0,5), процент выхода у опытных животных был выше только на 0,8 %.
