"Electronic tongue" (e-tongue) is instrumental system are designed to crudely mimic human taste sensory organs and are composed of an array of sensors. Complex data sets from "e- tongue" signals combined with multivariate statistics represent rapid and efficient tools for classification, recognition and identification of samples, also for the prediction of concentrations of different compounds.
