The following is taken from the report of the Principal of the Somerset House The systematic examination into the composition of genuine milk alluded to in my last report has been continued during the year, and the results show that while there has been a sensible improvement as compared with the results obtained in previous investigations in the quality of milk as regards the proportion of fat, the percentages of non-fatty solids in the several milks were relatively in agreement with the
