Honey Characterization Based on Physicochemical Parameters using GIS Techniques: A Case Study in Selected States of Northern India

Honey is considered as natural and healthy product that has a highly concentrated solution of a complex mixture of carbohydrates. The quality of a honey depends on its geographical and botanical origin. Therefore, classification of honey according to geographical origin is of great interest. more » ... from different regions of North India (Punjab, Uttar Pradesh and Rajasthan States) and characterization was carried out on the basis of their quality parameters (moisture content, color, hydroxymethylfurfural (HMF), total reducing sugars, sucrose and fructose/glucose ratio) and these parameters were mapped and interpolated with GIS technologies.
