EFFECTIVENESS OF OZONATED WATER PACKAGE SANITIZATION IN FLUID FOOD PACKAGING SYSTEMS

The antimicrobial effects of ozonated water were studied against Bacillus subtilis and Aspergillus niger spores and viable Enterococcus faecalis, Lactobacillus brevis, Lactobacillus plantarum, Lactobacillus casei and Saccharomyces cerevisiae cells. The in-vitro tests showed higher resistance of the A. niger spores to the ozonated water in comparison with the B. subtilis spores. The tested fluid food packaging system showed satisfactory performance in the ozonated water sanitization of HDPE bottles and reached up to 8 decimal reductions of the bacterial vegetative cells and up to 4 decimal reductions of the A. niger spore population. Ozonated water could successfully be used for package sanitization in fluid food packaging systems.
