ggOME of the points that I emphasise in my paper are : that the kJ colouring of cream, butter, and milk is still legally permissible, that butter substitutes are often improperly supplied, and that there is no standard of fat for cheese; in other words, cheese may be made from skimmed milk, and sold without disclosure of the fact.
