Characteristics of a heat-tolerant rice cultivar for sake brewing

The suitability for sake brewing of heat-tolerant rice cultivars was investigated by analyzing raw material rice properties--including digestibility and small-scale sake brewing--compared with normal rice cultivars. Heat-tolerant rice cultivars maintained a high ratio of whole rice on average even in a year of intense heat. They did not show any decrease in digestibility(Brix)in the above average year of 2010 while normal cultivars did. From these results, it appears that the sake-making

A statistical analysis suggested that suitability for sake brewing of heat-tolerant rice cultivars depends on the variety and strength of the influence as well as changes from the differences in a given year.
