Regiospecific analysis of triacylglycerols was carried out using immobilized lipase (from Rhizopus delemar). Interesterification (acidolysis) of triacylglycerol and fatty acid sample was conducted with immobilized 1,3-positional specific lipase in n-hexane. The fatty acid was arranged not to contain the sample triacylglycerol. Triacylglycerol whose acyl groups at sn-1,3 positions were exchanged with non-constitutional fatty acids was obtained.
