Comparison of Extraction Methods of Chondroitin Sulfate from Meat By-products

Chondroitin sulfate(CS) has been used in cosmetics, medicine and food as an ingredient. Some difficulties of the extraction procedure have caused the low availability of this material. This study was carried out to compare the extraction methods of CS from meat by-products such as kidney, liver and trachea of cattle, swine or chicken. more » ... ods). The yields of CS by hot water extraction and enzymatic hydrolysis were significantly higher than those of the control (P<0.05). The highest yield of CS was obtained by enzymatic hydrolysis and the yields were 81.46±0.90, 81.12±1.53 and 80.80±1.05% on chicken trachea, bovine trachea and bovine liver, respectively. The highest quantity of CS was 21.19±1.82% obtained from the enzymatic hydrolysis of bovine trachea. Ethanol concentration during extraction influenced the yields of CS. In enzymatic hydrolysis, the yields of CS were increased as the ethanol concentration increased. In conclusion, the enzymatic hydrolysis method was the best procedure among the methods to extract the CS from meat by-products. (
