Since enzymes are known by their actions and as yet the best guide lo progress and indication of success in attempts to isolate, concentrate or purify a natural enzyme is afforded by properly controlled quantitative determinations of its activity, we have devoted much attention to the problem of defining the conditions under which each of the three amylases with which we have chiefly worked may exert its full activity as an enzyme.
