INTRODUCTION The chiral carbon centre of phospholipid molecules at the head group has a strong influence on the functional properties of these molecules in their membrane form. However, little is known about the chiral influence on the structure itself. An appropriate system for the study of such an effect on biological membranes are phospholipid monolayers on water, as the head group may assume a free energy minimum configuration in the absence of an adjacent layer.
