BACKGROUND An antioxidant is a molecule capable of slowing or preventing the oxidation of other molecule. An antioxidant has been defined by Halliwell and Gutteridge as any substance that when present in low cone compared to the level of an oxidisable substrate significantly delays or prevents oxidation of that substrate. The term oxidisable substrate include proteins, lipids, carbohydrate s, enzymes, nucleic acids, etc.
