The total amount of antioxidants and their activity with respect to oxygen and its radicals are measured in water extract of mint peppery (Mentha piperita L.) by two electrochemical methods: ammetric and voltammetric. Mechanisms of interaction of antioxidants with oxygen and its radicals have been investigated.
