FORMALDEHYDE LEVELS IN FISH FROM THE KANDY MARKET

Of 260 samples of market fish tested for fon~ialdehyde 34 samples tested positive with a maximum of 20pg/g of formaldehyde with a mean for all species of 1.85 * 3.9'7 pg/g. Pieces of h h dipped in formaldehyde solutions of concentrations 50 arnd 100 pglg retained up to 3 pg/6 (75%) formaldehyde after coo!ung and up to 3.2 p$fg (80%) after deep frying. The low concentrations of formaldehyc'e detected in fish in the market may be raatrtillly occurring.
